Dried and fresh Thai chiles, sugar, fish sauce, and lime juice make a bold and delicious dressing for this Isan-style salad. Toss the dressing with tomatoes, bean sprouts, and pork rinds that soak up the flavorful dressing.

class=The answer came when I was reading through Fucshia Dunlop's books, in which she mentions that in Northern China, the starchy water leftover from boiling noodles is often drunk like a silky soup or added to sauces to thicken them. It's exactly the same way an Italian cook will save some pasta water to add to their sauce—the extra dissolved starch thickens the sauce, binding it and helping it cling better to the noodles.

This hearty white bean soup with spinach flavored with garlic and rosemary is a great winter warmer, perfect for those evenings when you've just come home from a day on the slopes or from romping with the dogs in the park or taking photos of majestic snowy owls, or whatever it is that active winter folks do in this day and age. The real magic of the recipe is the way the starch released from the beans helps the extra-virgin olive oil (and do use your best extra virgin for this) to emulsify with the liquid, creating a rich, spoon-coating texture in no time at all.

The problem with so many steam-table iterations of this dish lies in the broccoli: It's too often mushy and bland. To keep it crisp and flavorful here, and get a good sear on the strips of beef without overcooking them, we stir-fry the ingredients over very high heat, using a wok or a wok insert over a grill.

Although olive oil won't emulsify into a pasta-coating sauce like butter will, by adding a little cornstarch to the base, you create a sauce that clings to the pasta as well as any butter-based sauce, and with all the bright, vibrant, complex flavor of olive oil.

As former Serious Eats editor Adam Kuban put it, crab rangoons, those little parcels of creamy filling surrounded by crunchy shell, are "just a big ol' excuse for crazy non-Chinese people to eat deep-fried cream cheese." And it's true—but that admission doesn't make them any less delicious. At your local Chinese-American joint, the crab rangoons are almost certainly made with surimi, those artificially colored sticks of reconstituted fish that you find in California rolls. Using real crab instead will give the dumplings a more assertive fish flavor; stick with surimi if you'd like to re-create the "crab" puffs of your youth.

Smoked low and slow on the grill, this chicken marinated with Scotch bonnet peppers puréed with other fresh aromatics and spices tastes incredible. It's an 11 1/2-hour process (about 10 of those hours are hands-off while the chicken marinates), but the flavor is beyond worth the effort.

Making the sauce for dan dan noodles is exceedingly simple once you've got the basic ingredients in your pantry. It's just a matter of mixing them in the right proportions. Soy sauce forms the base, while Chinkiang black vinegar lends its characteristic acidity—it has a sweet, almost balsamic vinegar-esque aroma to it, though not quite as syrupy as that. Fermented broad bean chili paste comes in many forms throughout China or can be purchased online. Chili oil is a given, and while it's best (and remarkably easy!) to make at home, there are a number of good options available at any decent Chinese market. Look for the kind which has actual chile, garlic, and ginger debris in the bottom of the jar, not the completely clear kind you see in easy-pour bottles. That debris is where the magic is at.

The first great thing about making dan dan noodles at home is that you can customize it however you'd like. Personally, I like the chile oil of the Sichuan version, Noodleinsight.Com but I also love adding crushed roasted peanuts to the top. Who's to stop me? Some hardcore versions of the dish have the noodles quite literally swimming in a bowlful of chile oil. I like my oil to coat the noodles and pool up a bit in the bottom of the bowl.

This recipe applies a Chinese technique to two decidedly Western ingredients, kale and frisée, with surprisingly good results. We cook them like any other hearty greens—adding the stems to a hot wok, followed by the leaves. There's no need for blanching, which makes this recipe super quick and leaves you with one fewer pot to clean.

A little spicy, a little sweet, a little salty, chewy Chinese noodles with cucumbers, peppers, and scallions coated in a chunky peanut sauce is a tasty, filling meal that's hard to get tired of. This version is made with far fewer noodles and many more vegetables. Indeed, it's now more of a vegetable salad with a few noodles added in for textural contrast.

While mushrooms are cooking, combine soy sauce, vinegar, tahini, sugar, chili oil (with its sediment), and broad bean chili paste in a medium bowl. Set aside. Bring 1 quart of salted water to a simmer in a medium pot and keep hot.

Transfer noodles to serving bowl and top with pork mixture. Stir vinaigrette and spoon over and around the noodles (you may not want to use all of it). Sprinkle with roasted peanuts, Sichuan peppercorn, grated garlic, and scallion greens. Serve immediately.
