Dan Dan Noodles Recipe

There are all kinds of variations on the dish that you'll find in Chinese restaurants in the U.S. Some go the ultra-authentic, hardcore traditional route, while others remove some or even all of the heat from the dish, instead replacing it with a creamy sesame (or even peanut butter!) based sauce. To me, picking one version of dan dan noodles as the best is kinda like choosing my favorite Beatles album: It's a constantly shifting debate, even with myself. Best plan is to just pick a path and run with it. This time I'm going for the more traditional approach. Obviously, modifying it for my vegan needs is going to alter that approach in practice (though not in spirit).

If the kitchen at your particular restaurant has a deft hand, Peking duck can be great with juicy cru Beaujolais or juicy Grenache-based wines, like those from Grammenon. There are some non-Riesling options for mushu, but honestly, this is an example of why Riesling is such a steadfast go-to wine.

A wok is designed to allow you to flip and toss whatever you're cooking with ease, but fish isn't as sturdy as chicken or beef. The water-velveted cod in this recipe needs to be treated more gently—turn each piece carefully so it doesn't fall apart. For your restraint, you'll be rewarded with a light, elegant dinner of bright, colorful vegetables and tender chunks of fish.

As the general rule I would pick wines with lower tannins, light to medium body and focus on preparation and cooking technique rather than ingredients. For example, if you serving spicy and complex dishes of Sichuanese cuisine, I would go with wines from Alsace (Riesling, Gewurztraminer, Pinot Blanc, Pinot Gris...etc) or German Riesling. If we are enjoying delicate seafood dishes of Cantonese cuisine my choice would be Chablis, Gruner Veltliner and any lean, crisp white wine. With fried food, the best choice would be any refreshing, palate cleansing sparkling wine(Cava, Prosecco, Sekt,...) or Champagne. "When pairing with Chinese food, you're looking for wines that are spicy, soft, and on the richer side. Chinese food is a generous cuisine, bringing expressive and muscular wines is important. For Mapo tofu, you're looking for spice and energy to match the dish. Red wines from the Douro in Portugal would play well with this dish. Mushu pork has a crunchy and fresh tone. Cabernet Francs from the Loire Valley, Cote de Beaune Reds, and Austrian Blaufrankisch would be a good fit, offering bright fruit and a fresh nature. Peking duck needs some richness and sweetness. Try rich and bold California Cabernets or Grenaches from the Languedoc Roussillon.
