Anyone who's spent a significant amount of time in or around New York City should be intimately familiar with scallion pancakes, the flaky, savory disks studded with chopped scallions and fried. We use a laminated dough here (much as you would if making puff pastry) to create layer upon layer of very thin sheets of flavorful pastry. Frying them in oil is traditional; for a puffier, crispier experience, try cooking them on the grill .

As former Serious Eats editor Adam Kuban put it, crab rangoons, those little parcels of creamy filling surrounded by crunchy shell, are "just a big ol' excuse for crazy non-Chinese people to eat deep-fried cream cheese." And it's true—but that admission doesn't make them any less delicious. At your local Chinese-American joint, the crab rangoons are almost certainly made with surimi, those artificially colored sticks of reconstituted fish that you find in California rolls. Using real crab instead will give the dumplings a more assertive fish flavor; stick with surimi if you'd like to re-create the "crab" puffs of your youth.

Cumin lamb falls into a wholly different category, however. Given that it's slightly rich, has that wonderful cumin spice yet remains quasi-delicate on the palate, there are countless great pairings for this dish. Anything from S. Rhone/Languedoc stuff, to Cornas, to Loire Cab Franc, to Sangiovese, to Nebbiolo, to Burgundy... there are so many choices. Favorites of mine include the Cab Francs from Baudry (A bargain!), Montevertine "Pian de Ciampolo" from Tuscany, older Bordeaux (mostly left bank or Pomerol) and also the wines of Leon Barral. The Barral wines are magic."— Collin Casey, Namu Gaji (San Francisco)

The first great thing about making dan dan noodles at home is that you can customize it however you'd like. Personally, I like the chile oil of the Sichuan version, but I also love adding crushed roasted peanuts to the top. Who's to stop me? Some hardcore versions of the dish have the noodles quite literally swimming in a bowlful of chile oil. I like my oil to coat the noodles and pool up a bit in the bottom of the bowl.

Fish sauce adds saltiness and umami depth, and dried red chiles add spice to these garlicky, crowd-pleasing grilled chicken wings. Plan ahead—they need to marinate for 12 hours before hitting the hot grill.

Chilaquiles are a classic Mexican breakfast dish that can be pretty aptly described as a fried tortilla casserole. Crisp chips are soaked in salsa (in this case a bright and tangy salsa verde made from tomatillos) until just barely softened but still mildly crunchy. This recipe combines black beans with charred corn, along with a few slices of avocado and a handful of toasted pumpkin seeds for a meal that's not only balanced in carbs, protein, and high in good green vegetables, but is crazy delicious to boot.

Turkish hot pepper paste, found in Turkish markets or online, adds heat to an emulsified sauce made with tomato, anchovy filets, egg, capers, tuna, Dijon, and oil. Pour it over the freshest in-season tomatoes you can get your hands on and garnish with basil leaves for a cool. spicy, summery salad.

Preserved mustard root like this (often labeled "Sichuan Preserved Vegetable") can be found in cans or jars in your Chinese market. Once opened, they'll last for months in a sealed container in the fridge. You don't need much to add big flavor to dishes.

This is the spicy slaw everyone at the picnic or cookout will love. Cabbage, red onion, cilantro, Thai bird chiles, lime juice, and salt combine for a side dish with a kick for grilled meats, fish, or vegetables.

Making the sauce for dan dan noodles is exceedingly simple once you've got the basic ingredients in your pantry. It's just a matter of mixing them in the right proportions. Soy sauce forms the base, while Chinkiang black vinegar lends its characteristic acidity—it has a sweet, almost balsamic vinegar-esque aroma to it, though not quite as syrupy as that. Fermented broad bean chili paste comes in many forms throughout China or can be purchased online. Chili oil is a given, and while it's best (and remarkably easy!) to make at home, there are a number of good options available at any decent Chinese market. Look for the kind which has actual chile, garlic, and ginger debris in the bottom of the jar, not the completely clear kind you see in easy-pour bottles. That debris is where the magic is at.

"General rule is that if the dish is hot and/or salty then find something with a little sweetness to extinguish the burn and flow with the dish. Riesling and off-dry Chenin Blanc are your wingmen. Wines with serious tannins, on the other hand, are your worst nightmare. For me this would be angry chimpanzees and big reds like Cabernet Sauvignon with spicy dishes. The spiciness of the dish is amplified to the nth degree and your mouth will be en fuego. For Peking duck, think Pinot Noir form the New world or riper-vintage old World Noodle Dishes|Https://Noodleinsight.Com/. California Pinot Noirs with finesse like Eric/Kent, Ghostwriter and Littorai. And if you want something from Burgundy then look for the 2009 vintage. This was a warmer vintage and the wines show a bit more voluptuousness. Baby got back! For cumin lamb? I like Zinfandel with lamb or of you want to get all fancy pants then Greek reds work as well. For a Zinfandel find one that has a bit of elegance to it—my favorites would be Scholium Project "Arrows of Apollo" Zinfandel. For the Greek wine try Skouras St. George."— Josiah Baldivino, Michael Mina (San Francisco)
